Tuna is one of the most challenging fishes to smoke. After a long testing period we were able to develop an ideal smoking and salting recipe, in which the taste of the tuna remains present and in which the tuna keeps its unique ruby-red colour. This delicacy is perfect for a carpaccio, or for a refined amuse-bouche.
